Flambed Plums - Saranathan
Ingredients:450 gm plums
50 gm butter
75 gm sugar
40 ml rum

Praline
50 gm almonds
50 gm sugar

Topping
4 scoops ice-cream
4 sprigs of mint



Method:To prepare praline, melt sugar in a pan and add almonds. Turn onto an oiled tray and leave to set.

Melt butter in a pan and add halved plums. Sprinkle sugar and cover with a lid. Cook for five minutes.

Arrange a few plums on a serving dish and flamb� with warm rum.

Place a scoop of ice cream on top of the plums.

Finish with crushed praline and a sprig of mint.
